As usual I had no idea what to say in this newsletter until just a few days ago. Then I received a phone call from a very good friend with whom I had worked for many years in the “Mad Ave” world. He had recently ordered some of our olive oils. “Victor, you and Susan are absolutely amazing. I love olive oil and have tasted olive oil in many countries in Europe. Yours is by far superior to anything that I have had. I also decided to share your olive oil with friends who are equally knowledgeable about olive oil. Their reaction was just like mine. You should start a monthly club and I want to be your first customer.” I explained to my friend that the uniqueness of our olive oil comes from our extraction method which is very ancient. Our olive oil is all hand pressed by us which gives it unique flavors and distinctive qualities. Most of the olive oil that people buy commercially is made with very expensive equipment. Ours is extracted with equipment that we built. I agreed that we would begin the process of creating the olive oil club.

So how did we wind up with our processing system? When we decided to make olive oil, we did not want to invest US$100,000 or more in equipment. We had no idea whether we could grow or buy olives, never mind learning how to make olive oil. We purchased a small press from California, which was delayed in customs. We were in a hurry, so we built our own press, purchased some olives, and started processing. A few weeks later when the press from California came, we used both presses. We quickly realized that our press was far superior to the one from California. We proceeded to build 11 more presses and we now can process close to one ton of olives a day. Some day we will need to purchase a heavy duty press to handle the volume of olives our trees will produce. But we will continue with our hand press method for special oils. Susan and I have a saying “God takes care of idiots” and we are very pleased that he continues to take care of us.
Here are the planned activities for February (and a sneak peak into something special for March).
Open House- Wednesday February 5
From 10 am to 3 pm, no charge, limited seating, transportation from Liverpool is available. Bring friends, spend a fun day in the country and enjoy our cuisine and products.
Olio Nuovo Fest- Tuesday February 11
Featuring our fall pressed olive oil beginning at 10 am with a light breakfast and continuing with an incredible menu featuring grilled dishes paired with our olive oils.
Vegan Fest-Wednesday February 19th
Come and taste flavorful, tasty and exciting food at our Vegan Fest. Start with avocado toast and other small dishes at 10 am and work your way through the day. The menu includes unexpected dishes such as paella and shepherds pie all vegan! Plan a truly healthy day.
Woodfired kitchen- A Mexican Fiesta Friday 21
Our Woodfired Kitchen launch event on January 23rd was an absolute success! We inaugurated the conversion of our old horse exercise ring into a 1400 square foot dining venue which includes a woodfired kitchen of our own design. We entertained 36 guests with live music, the menu was spectacular, the food was fantastic. Most importantly the guest reaction was incredible. Our February event will feature woodfire cooked Mexican cuisine. We look forward hosting another fun group!
Celebrating Carnival - Friday February 28
Opa! Come and celebrate Carnival with us with an afternoon of typical Brazilian food and a welcome Capirinha cocktail. Maybe even a little samba dancing.
Casita- Bed and Breakfast
By mid-February we plan to launch our Bed and Breakfast. The casita’s three bedrooms will each have their own full bath. A mini suite downstairs which will provide a fourth bedroom area and will also offer spa and massage services. Guests will have use of a small solar heated swimming pool with a soaking tub in a garden with orange, lemon, fig, pomegranate, loquat, and banana trees and even a small green house with a variety of vegetabless. Our restaurant will be available for meal and snack services as well as breakfast services. A shuttle service to and from the Luciernaga shopping center will be available, so you can enjoy all that SMA has to offer both in the city and countryside. Our pickleball and bocce ball courts will also be available. Truly an escape from it all! Come and enjoy. Contact us for more information and reservation.
Restaurant
Our Restaurant is now open 7 days a week from 9 until 4, last seating at 2:30. With a changing menu, cooked to order, addressing dietaries needs (gluten, daity, vegetarian, vegan, etc.) and complementary transportation to and from Liverpool we aim to deliver botn on quality and pricing! Have a group? No roblem, we can do special menus.
February Cooking classes
March Special Class - Paint a Parasol
Susan’s sister, Laura, got all the artistic talent in the family. She will be visiting mid-March and has agreed to lead a class on how to create your own unique parasol. All supplies will be provided and refreshments and lunch will be available. Just let your creative juices flow!
The class is limited to 10 students, and will begin at 10am and finish around 3pm. Transportation is available for any needing it. For more information and reservations.
